Chef's Restaurant Today, Stéphane Haissant expresses himself in an almost ordinary bistro, but with attention to detail. With his squared-off tables lined up in a row, the globe-trotting chef returns to the local produce and puts his know-how at the service of a personal cuisine inspired by past experiences, in particular with the marine element: sea bream marinated in sea salt, mixed peas with lemon, cucumber and raspberry, shoulder of lamb confit with mustard and honey, artichoke pulp with turmeric and lemongrass, tarte fromage blanc with basil and mint, rhubarb ice cream with coteaux du layon and red fruits, a fine sequence of dishes kindly billed at €37, one of the best prices on the resort.
