Chef's Restaurant Bistro "plus plus" with Stéphane Haissant, who offers refined cuisine in the heart of the city that goes far beyond the brand name. Discreetly, but with seriousness and precision, the chef offers an imaginatively renewed seasonal menu, with confident gestures and well-chosen accompaniments and seasonings: grilled eggplant ceviche with sesame herring shallot yoghurt nori, poultry breast contisée with smoked eel cider and Cajun spices, tarte cacao miso ribot milk ice cream grué cardamom. The full menu-card sequence at €40, a real bargain here, small cellar to reinforce.
