A "plus plus" bistro with Stéphane Haissant, who offers refined cuisine in the heart of the city that goes far beyond what the name suggests. With understated elegance, yet with seriousness and precision, the chef presents a seasonal menu that is imaginatively reimagined, featuring confident techniques and well-chosen accompaniments and seasonings: grilled eggplant ceviche with sesame, herring, shallots, yogurt, and nori; chicken breast stuffed with smoked eel, cider, and Cajun spices; and a cocoa-miso tart with buttermilk ice cream, cacao nibs, and cardamom. The full tasting menu is priced at €44—a real bargain here—though the wine selection could use some expansion.
