Mango Sticky Rice log, Maison Sève

For Christmas, Lyon-based Maison Sève has created a collection of logs "inspired by encounters, family memories and distant lands". Among them is the Mango Sticky Rice log, inspired by the famous Thai dessert. inside, a soft sponge cake, roasted mangoes in fragrant jelly, fresh coconut gel, a creamy vanilla rice cream, set on an almond dacquoise. A direct echo of the culinary memories we've brought back from our travels over the years.

The Equinoxe log, Cyril Lignac

To round off the Christmas meal, Cyril Lignac has revisited his signature Equinoxe, creating a log of vanilla cream, caramel heart and crispy speculoos cookie. Its futuristic, original look is sure to delight both eyes and taste buds.

The Vanilla-Lime Log, Jeffrey Cagnes

In addition to his signature log, Jeffrey Cagnes offers three more affordable and equally gourmet logs. Our favorite: a refreshing, well-balanced log, composed of a Neapolitan vanilla cookie, a streusel crunch, a creamy limelime cream, lime gel with Madagascar vanilla, Madagascar vanilla mousse and lime ganache.

Marron, pear and quince log, Hugues Pouget

To accompany the opening of his eponymous boutique, Hugues Pouget is launching a collection of four Yule logs. In particular, he has imagined a creation with winter flavors, which combines "gourmandise and elegance", as the chef explains. It features a chestnut flour crumble, a chestnut cookie with glazed chestnut chips, a quince and pear compote and a chestnut mousse, sublimated by a decor of chantilly and glazed chestnuts.

Voile de Lait Mandarine log, Yazid Ichemrahen at At Home

This snowy-valley log features a Japanese-style puff pastry, scented with Indonesian vanilla with Indonesian vanilla, mandarin and yuzu confit, vanilla and white chocolate cream and mandarin pieces. The roulade is topped with a veil of tonka-bean-infused milk. A sweet log.

Chocolate-Hazelnut log, Chapon

For its "Merveilleuse épopée en Chaponie", the house has created a log that is an ode to chocolate and gourmet delights, sure to appeal to the whole family. On a crunchy hazelnut praline base is a soft hazelnut cookie, a praline insert and a light Papua rare cocoa mousse, covered with fine golden glitter.

Infiniment Vanille log, Pierre Hermé

Pierre Hermé offers "nomadic" logs that can be easily transported. Among them, a log inspired by its legendary "Infiniment Vanille" collection, composed of white chocolate ganache, vanilla mascarpone cream (made from a blend of three vanillas) and shortbread crust.

The Nkolossang log, Jean-Paul Hévin

Chocolatier Jean-Paul Hévin honors Cameroon with this "travel log". It features a crunchy gianduja-anis shortbread, a cocoa and almond paste cookie, and a 70% dark Cameroon cocoa chocolate mousse from the Hévin-Nkolossang harvesting center. A chocolate plaque with African fabric motifs adorns this creation.

The pastry chef honors the French capital with a log depicting Paris in 3D, using a mold he conceived, designed and conceived. It features a crunchy almond-buckwheat base, a soft buckwheat cookie, tatin-style pear brunoise, Christmas-spiced caramel, all wrapped in a delicate vanilla mousse.

The Tout Chocolat log, Stohrer x À la Mère de Famille

Stohrer has created an all-chocolate log for the festive season, playing on textures for a contrasting result. Melting brownie, feuillantine crisp, "grandmother-style" chocolate mousse, 65% ganache montée and 85% dark chocolate veil make up this log. As for the design, it pays homage to the historic À la Mère de Famille boutique on rue du Faubourg Montmartre, a wink between the two sister houses.
