Virginie Giboire, chef at Racines restaurant in Rennes, reveals five addresses of producers, artists and craftspeople to help you fine-tune your menu and your art of the table.

Grande de Demain according to Gault&Millau 2023, Virginie Giboire (3 toques) is a benchmark for gastronomy in Rennes. Trained alongside Thierry Marx at the Mandarin Oriental, among others, the chef realized her childhood dream by opening her own restaurant, Racines, in the heart of Brittany's capital. The young woman works with many local products, including seaweed, hemp and vegetables. Virginie Giboire gives us five good addresses for artisans and producers, so that we can stock up as we should!

Flour from Minoterie de Champcors, Bruz

Virginie Giboire has been sourcing her wheat flour from Bruz, on the outskirts of Rennes, for nearly five years. "The Champcors mill has been handed down from father to son since 1953. They work organically, with local wheat, and quite a few bakers and restaurateurs buy from them", explains the chef, who adds that the Moulin de Champcors also sells to individuals.

Vegetables from Ferme d'Artaud, Loire Auxence

Virginie Giboire relies on Ferme d'Artaud, not far from Angers, to find the right vegetables for her restaurant. "Hélène Reglain is a young woman who started out about six years ago, and her vegetables are real gems. She grows a lot of Japanese vegetables like daikon and kiwano. You can also buy baskets of vegetables to pick up at the farm or have delivered anywhere in France."

The art of the Ostraco table, in Rennes

Lucile Viaud is an artist and founder of the Ostraco brand. "She trained as a chemist and, among other things, she made water glasses for us from abalone shells, which she grinds. She then pigments the dishes with seaweed, depending on the desired color," Virginie Giboire explains. "She has an online boutique and sells in several galleries in Pont-Aven, Nantes and Paris. She also makes beautiful Christmas baubles," assures the chef.

Anouchka Potdevin's decoration at La Vicomté-sur-Rance

Anouchka Potdevin works metal into art and decorative objects. "In the restaurant, we have pretty metal leaves adorning the walls... Her work is really hot, she's an incredible artist", says Virginie Giboire, who points out that Anouchka Potdevin has notably worked for Guerlain.

Gin from Maison Dutier, La Bouëxière

For cocktails, but also in the kitchen, Virginie Giboire is a fan of Maison Dutier gin. "We use their hemp gin, made with organic plants and seeds, in the restaurant. Their approach is super interesting, and we made a lobster with tomato water infused with hemp gin at Racines... It was a hit!", enthuses the chef.
