Mathieu Pérou, chef at Manoir de la Régate in Nantes, is a fervent advocate of local produce. Here, he reveals five addresses where you can buy good local produce.

At the Pérou family, catering is a family affair. Since 2017, Mathieu and his younger sister Anne-Charlotte have taken over the Manoir de la Régate in Nantes, with clearly defined positions: he in the kitchen, she in the dining room. A duo that works wonderfully well, Mathieu Pérou won the Transmission Ouest trophy in 2018, then the Terroir d'Exception trophy at the Gault&Millau Tour Loire in 2022, and finally the Grand de Demain award in 2024. The chef is therefore well placed to give us a few tips for buying fine vegetables, raw cream or freshwater fish close to home.

Fish from the Pêcherie de Bellevue, Sainte-Luce-sur-Loire

The Manoir de la Régate (3 toques) is located in Nantes, on the banks of the Erdre river. So it's only natural that Mathieu Pérou works with freshwater fish! To obtain his supplies, he turns to Gäetan Bonnet and his son Mathéo, located five minutes from the restaurant. " They have great products, and Mathéo transforms them into rillettes, civets, jars and smoked fish," explains Mathieu Pérou.

Tableware from Ambre Céramique, Nantes

Mathieu Pérou trusts Ambre Hervo, a ceramist in Nantes, to create beautiful tableware for his restaurant. The young woman produces porcelain creations, as well as contemporary pottery, and sells her creations in a number of boutiques in the region. "She also exhibits regularly for those who want to discover what she does," says the chef.

Vegetables from Ferme de Belle Ile, La Chapelle-sur-Erdre

"This is one of my market gardeners for the restaurant. He's a safe bet, and we can go straight to the farm to pick up his produce," explains the Manoir de la Régate chef. Strawberries, peas, green beans, zucchinis... It's up to you to choose what's in season!

The cream of La Ferme de la Pannetière, La Chapelle-sur-Erdre

"La Ferme de la Pannetière is the story of three farmers who got together to take over a dairy farm. They have a small herd and make milk, cream and raw cream. They also make tomme and fromage frais," explains Mathieu Pérou. " You can even see the farm from our restaurant," he laughs.

Le beurre de la Belle Miss'Terre, in Le Pin-en-Mauges

Mélanie and Mickaël live in Maine-et-Loire and are real enthusiasts. "They have a very small herd of cows, and travel all over France collecting old breeds from farmers who have gone out of business and can't find any takers. They have their own sales outlet and their butter is exceptional," assures Mathieu Pérou.
