Clément Lessoud, a new nugget in Toulouse
Having worked with Ludovic Turac in Marseille (Une Table au Sud, 3 toques), here at Hortùs ("òrt", in Occitan, means "vegetable garden" in Latin), Clément Lessoud's cuisine is contemporary yet firmly rooted in tradition. His sole au vin jaune is already a great dish. The Ville Rose has been missing an address of this calibre, which is only too happy to grow! C. T

Mumm welcomes a Grand of Tomorrow
Mumm is inaugurating a new restaurant in Reims: the Table des Chefs. In the plural, because, on the model of artists' residencies, the champagne house will be inviting chefs to come and take charge for three months in its private mansion from May 12. The first chef to be invited is one of our latest Demain 2023 Grands, Mallory Gabsi, who will be at the helm until early August. He will be succeeded by Florian Barbarot (Quelque Part, 2 toques, Paris) in August, then Kelly Rangama (Le Faham, 2 toques, Paris) from November. Food and wine pairings will be devised by Raimonds Tomsons, voted World's Best Sommelier last February. S. B.
