Despite the name, this is a complete kitchen, where chef Clément Lessoud works with vegetables with great skill, but also knows how to use them as accompaniments. There's no à la carte menu, but at these prices, the risk is limited and the sensations are good. Take, for example, the 5-course Prémices formula for €67, which features a parade of pretty products, such as smoked fish roe and beet, cauliflower and coffee, monkfish, Aveyron veal, rum and vanilla... The cellar is expanding and will satisfy most tastes.
