Gourmet Restaurant Since Simon Jouët and his partner Mounia set up shop right next to the Basilica, visitors to this proud city with its beautiful fortified castle have also come for the taste of the fork. The chef has quickly focused on authentic, seasonal cuisine with character, such as oysters in tarragon sauce with a touch of yuzu, celery and cauliflower... fillet of pollack in potato flakes with orange rosemary sauce or fillet of beef with morel mushrooms, with three menus and a fairly short choice of dishes, but one that allows total control over quality and consistency. In this way, the desserts may seem very simple, yet we still have the taste and perfect texture of the crème brûlée in our mouths...
