Cuba in all its states

All the spirit of Cuba, perfectly repimped, imagined for Eminente rum. A private mansion in the 4th arrondissement of Paris for the venue and Selency (second-hand furniture) for the decor; that's the setting. On the plate: several chefs will be invited to take up residencies, with Céline Pham opening the ball and proposing, until May 28, a cuisine tending as far as possible towards zero waste. Virtuous. Guillaume Goupil settles in Fontenille

He has left the Burgundy, in Paris, for sunny Provence and the Domaine de Fontenille, flagship estate of the collection of the same name. It's quite a challenge for this MOF 2022 to take charge of two restaurants: one more bistro-style, La Cuisine d'Amélie, and the other more gastro, Le Champ des Lunes. The chef at L'Almandin (L'Île de la Lagune hotel, Saint-Cyprien) loves 4-hands and surprises. Frédéric Bacquié, 1 toque, invited MOF pastry chef Olivier Bajard to share an "immersive experience". Details of this 179th Table d'Honneur - menu content or precise location (all we know is that it's within the hotel) - are being kept secret.
