Ce petit domaine n'élabore que des micro-cuvées issues d'un seul millésime à partir de son vignoble établi sur les coteaux de Charly-sur-Marne, Saulchery et Bonneil. La vigne, conduite en agriculture biologique, bénéficie de toutes les attentions et les travaux sont réalisés par traction animale. Ici, sont élaborés des champagnes vivants qui méritent d'être découverts.

With a lovely salmon colour, this pure Meunier is vinified as demi-sec without dosage, that is, by a tirage with residual sugars. The nose is superb with notes of candied pears, red apples and almond paste. On the palate, the wine is particularly round and not at all sweet, as if the sugars had been digested, and good acidic length. Another magnificent wine to be served at the table with a sweetbread (ris de veau).

Issue de la vendange 2015, cette cuvée se montre d’une grande pureté aromatique : à la fois minérale, saline et gourmande, elle est dotée d’un dosage approprié de 11 g/l qui se mêle aux notes marines et iodées sans jamais déséquilibrer l’ensemble. Appétence et digestibilité pour ce champagne qui accompagnera un gravlax de saumon à la betterave rouge

This naturally coloured Meunier has a fine rose tinted robe. The nose is complex with aromas of marzipan, pear compote, with finely wooded notes. The wine is smoky and vinous in an assertive style on the palate. One can envisage surprising food pairings with this smoky aspect. To discover!
