Gault&Millau's review
The son of winegrowers from the Marne region, Thomas Perseval returned to the family business after completing his training, with one conviction in mind: to convert the estate to organic farming. This was achieved in 2012 with the award of AB certification. Forming a 2.5 ha vineyard on the Montagne de Reims around the village of Chamery, the six parcels are vinified separately to express their specific characteristics as faithfully as possible. All the cuvées - with little or no dosage - reveal intensely aromatic, fresh champagnes.
