The nose reflects the ripeness of the vintage, with aromas of ripe fruit (white peach, quetsche, nectarine) and more pastry-like notes of pistachio cream and fresh almond. This power and complexity are reflected in a full-bodied body with creamy bubbles. Sweet spices and dried apricot return just before a finish that's not lacking in character, just like the dishes this champagne will accompany, such as roast capon or sautéed veal chop.
