Gault&Millau's review
The 4-hectare estate is located in Essoyes, in the Côte des Bar. Their three parcels are certified in organic and biodynamic agriculture. In the search for maximum expression of the terroirs, every year each plot is separated during production and the cuvées are named after their different soils. The Cognaux is located on a gray clay, Martin Fontaine on a very calcareous soil and Fosse-Grely on red clay. The vinification is done now without added sulphites and aging in barrels or demi-muids. Unfiltered, the wines are released after a minimum of 18 to 22 months. The wines are magnificent.
