An experimental cuvée that's original every year. This is the 2015 harvest, disgorged in December 2018, made from over-ripe Pinot Blanc in a quantity of 996 bottles. The nose is flattering with notions of stone fruits like peach and plum mixed with toasted cereals and yeast. The palate is soft and fresh, with fine effervescence and a tangy finish of citrus and plums. Enjoy with fine cheeses matured with fresh fruit, such as a Langres served with rhubarb-pepper jam and pink lady apples.
