A beautiful, almost red color with purple highlights for this saignée, with a powerful nose of blackberries, wild strawberries and blackcurrants. On the palate, the wine matches it, with ample vinosity and well-preserved fruit. A very fine saignée that retains its freshness on the finish, to be opened with pigeon served rare, accompanied by a fine quenelle of pan-fried foie gras.

Philippe Martin

The house Philippe Martin has been producing champagnes for over two centuries and nine generations in the Premier Cru classified town of Cumières. Passed on from father to son, the Martins vinify nearly 10 hectares of vineyards spread over 6 areas. Wines are aged in vats or barrels in the cellar, depending on the vintage. The estate has developed oenotourism activities, offering visits to the cellar and their vine and wine museum, champagne tastings, walks in the vineyard, including during harvest days. By reservation, the domaine also offers, food and wine pairing sessions, and cheese and champagnes.
