The nose of this cuvée is a little austere on opening, before opening up with aeration, which gives notes of lemon peel and yuzu a mineral tension. On the palate, the wine is not lacking in generosity, with a mid-palate that reveals the dosage before lengthening with a clear, subtle tension. This champagne, with its distinctive personality, is the perfect accompaniment to fish with character, such as sea bass.
