With a suave, powerful nose that's also rich and greedy, this cuvée develops these characteristics on the palate, complemented by hints of bacon and smoke. The chalky, saline structure adds appetite and depth. Its finesse and length call for a colorful dish, such as sautéed abalone with beurre meunière.

The vineyard has been deeply ploughed for generations, and the estate is certified HVE (high environmental value). He is happy to ignore trends and fashions to produce wines that are always remarkable, and that age wonderfully.
