Perceval, another name that takes us back to the Round Table. The bubbles are numerous and lively in the glass. They flow lightly and impetuously through the wine, which has a pale gold color with silver highlights. The nose is fine and delicate, with aromas of flowers, citrus fruit and breadcrumbs on aeration. The attack is suave and velvety, barely disturbed by fine, discreet bubbles that awaken the honeyed side of the fruit. The finish is more upright and mineral. Try with escargots au beurre persillé.
