The information we have: EB = extra brut ? ; 1.17 = 2017 harvest ? ; M3=maybe a blend of the 3 main Champagne grape varieties ? The pale gold color precedes a discreet nose. The ripe palate attests to the maturity of the grapes making up the blend. We're leaning towards Pinot Noir for power and Chardonnay for freshness. The terroir is enhanced by discreet dosage.
