This top-of-the-range cuvée, made from a blend of Mailly grands crus (60% pinot noir from the 2009 harvest and 40% chardonnay from 2008), is vinified and aged in wood then corked. The nose, discreet and fine, does not reflect its woody ageing. The palate is airy and chiselled, offering gentle, caressing sensations. The wine combines lightness of texture with aromatic power. Best served with noble fish, such as St. Pierre with samphire cream.

In the 19th century, Isabey and his wife Zélia founded the Remy-Dubois champagne house in Mailly-Champagne. Ernest Remy took over the reins with his wife Marie-Antoinette, and together they decided to give a second life to this house steeped in history. Today, Alice and Tarek Berrada continue the family adventure. The 15-hectare vineyard is located in the 100% Grand Cru communes of Mailly-Champagne and Verzenay, with a majority of Pinot Noir and some Chardonnay.
