This champagne is named after the northern-facing plot of Pinot Noir on the Côte des Bar from which it comes. On the nose, the wine's greediness is astonishing, with smoky, almost lardy notes on opening, followed by warm bread, cereals and toast. On the palate, the wine's volume is impressive. It coats the palate perfectly before lengthening with vivacity on the finish. The low dosage suits it very well. We'd recommend opening it with a red meat in a dry coffee marinade.
