A year that stands out in the sunny style of the decade. A blend of 41% Chardonnay and 59% Pinot Noir, including Pinots Noirs from the "Chants de Linottes" parcel in Hautvillers and the "Vauzelles" parcel in Aÿ, for an old rose color with salmon hues, crossed by bubbles refined by 12 years in the cellar. The mousse is creamy and finely colored. The nose explodes with aromas of redcurrant, raspberry and floral notes of violet, freesia and iris, becoming windier with aeration, in a fruit-paste style with candied angelica for freshness. On the palate, the wine is creamy and airy, like whipped cream, with red fruit flavors. Marked by Pinot Noir, it slides towards a thirst-quenching, livelier, more delicate finish: it's the Chardonnay that speaks. The fruity balance and freshness are felt throughout the tasting. Remarkable! Food pairing: langoustines with mild curry.
