Light color for this rosé, with a very discreet nose of fresh red fruit, gooseberry, raspberry, fine spices and cooked citrus: all freshness. Airing reveals the house's expected notes of toast and cocoa. The palate, with its rare freshness, also needs aeration (don't hesitate to decant) and gives notes of redcurrant soufflé, with a doughy yet airy and fine texture. This delicate rosé would be perfect with a fricassee of crayfish with tomatoes, or a simply roasted pigeon.
