This blend, half from the 2016 harvest plus reserve wines from parcels in Aÿ, was aged for 2 to 3 years in barrel. The rich, powerful, chalky nose precedes a palate to match, with pleasant aromatic persistence and creamy sapidity. The time spent in barrel gives it elegance and roundness. A champagne for gourmet connoisseurs, to be served with veal sweetbreads meunière.
