The nose, lightly fruity with pear, yellow apple and granny smith, is both fresh and stewed, with notes of pastry and cake spices. The bubbles are tonic and zesty, and the mousse is light and foamy. The palate is chiselled and crisp with yellow citrus fruits (grapefruit, lemon, even green pineapple), finishing with poached pears. This 100% pinot noir comes across as summery and exotic (like a chardonnay), a sensation presumably created by the right, well-integrated dosage.
