A blend of 70% pinot noir plus chardonnay for this barrel-fermented cuvée. A lovely nose of freshly blossomed white flowers. The patina of wood balances the chalky chewiness on the palate. The bitters emerge majestically on the finish. A powerful, thirst-quenching champagne to share with a fricassee of lobster with butter and porcini mushrooms.
