ES stands for Elisabeth Sarcelet, the retired former head cellar master. The 9 refers to the start of the soléra in 2009, and the 0 to the first cuvée made from it. The nose offers complex notes of caramel, spices and honey, as well as citrus fruit. On the palate, tiny but crisp bubbles lift a wine that presents both ripe fruit and invigorating citrus notes. Magnificent. Taste now and with every new release.
