Beneath a dense, creamy mousse, rich, savory notes of stone fruit (peach, apricot) and pastry aromas contribute to an opulent bouquet, a sign of the cuvée's age. But there's no heaviness, as a tangy base adds a touch of playfulness. The palate is soft and suave, with a beautiful tonicity provided by fairly intense bubbles. Yellow citrus fruits bring their acidity, while the finish stretches out on salivating bitters. All that's missing is a few oysters to complete the picture.
