Founded in 1860 by Edmond de Ayala, Ayala is an independent, family-owned estate located in Aÿ, in the heart of the Grand Cru region. A pioneer in the production of wines with low dosage, the estate is distinguished by the purity of its style. Born of meticulous craftsmanship, each cuvée expresses the elegance of Chardonnay—the house’s signature grape variety—and the uniqueness of a place where everything is produced on-site from a variety of unique Champagne crus. Here, blending is an art and purity is a hallmark. Ayala cultivates 120 hectares of vineyards. Of its 22 hectares of estate-owned vineyards, 7 are now farmed organically.
