Gourmet Restaurant This 5-star hotel in the heart of its park is a rare institution in Palais, and an opportunity to discover the refined, masterful dishes of chef Alexandre Paget. In an interior designed by Jean-Pierre Bouvée, which combines bourgeois elegance with a contemporary, uncluttered and intimate atmosphere, the dishes deliver a heart-warming taste of the South-West, in personal and contemporary combinations. The regional product is often complemented by a touch of exoticism or contrast, such as crab with almond milk and coffee, avocado, Mediterranean red tuna, sea lettuce, peas, virgin apple and tagetes, cecina, a fine fillet of veal from the Pyrenees, Swiss chard with truffle honey, tagetes gnocchi and truffle blanquette sauce...
