Chef's Restaurant Gastro and bistro (l'Atelier), la Robe splits into two, to the delight of Vendéens. Xavier Giraudet is a chiseller of plates, with a sober aesthetic that optimizes flavors. Beautiful, ripe produce, the right sense of balance and harmony on the plate for well-composed menus: lemon radish salmon, mushroom ravioli, oyster mushrooms, shiitake mushrooms, duck Burgaud with apicius-style spices, turnips and Campari orange tartlet in a €55 menu that gives lightness and finesse right through to the seasonal citrus dessert. A vegetarian menu and a large Signature menu at €90 are also available, in a simply elegant setting. A generalist wine cellar with beautiful labels.
