Chef's Restaurant In this bourgeois house, everything runs smoothly, efficiently and professionally. Business clientele flock here at lunchtime for the best meal in the area, thanks in particular to the unbeatable €29 menu (raw and cooked beet with mustard ice cream, tuna ventrèche with brocoletti soy sauce, mirabelle plum tartlet), while families return in the evening for chef Xavier Giraudet's gastronomic flights of fancy: 50° salmon with cucumber slice, batak berry and lemon yoghurt, warm Paimpol cocos with mussels à la marinière and sabayon, roast pigeon fillet, black pudding from the thighs, lemon carrot juice. A strong emphasis on plant-based ingredients, a well-supported local approach for one of Vendée's finest restaurants. Well-sorted cellar, with departmental wines (Mourat, Chabirand, Michon) and a well-honed Loire selection, quite classic elsewhere.
