Chef : 1 restaurant At Chalet Flachaire, chef Thomas Flachaire and Estelle Harington offer intimate, meticulously-prepared cuisine in a transformed chalet, awarded the Jeune Talent trophy.

Presentation

Trained at Troisgros, Bras, Marcon and Roellinger, Thomas Flachaire accumulated experience in the finest establishments in France and Japan. After more than three and a half years at Troisgros, he left the prestigious establishment as sous-chef, armed with his rare technical skills and exacting standards.

A meeting and a shared project

Alongside Estelle Harington, a former GL Events employee and Relais & Châteaux consultant, Thomas embarked on a joint project: to open a high-end chalet combining accommodation and gastronomy. "Estelle and I chose to settle in the Abondance valley. We're only 20 minutes from Thonon, 1 h 30 from Annecy, and right next to the major winter sports resorts," explains the chef.

Opening and transformation of Chalet Flachaire

The 70s chalet has been completely renovated by the couple, with Thomas sanding the wood and Estelle doing the painting. The warm, intimate setting welcomes a dozen guests around a fireplace and an open kitchen. The first service took place on Valentine's Day 2025.

Thomas Flachaire's cuisine , already highly accomplished, combines precision, creativity and quality products. It earned the young chef the Gault&Millau Jeune Talent trophy , confirming the excellence of this intimate project where gastronomy and conviviality are perfectly combined.
