Chef : 1 restaurant An indefatigable traveler who has spent time in Amsterdam, Hong Kong and Japan, Noé Viviès opened Jozy in Rennes at the end of 2025 with his partner Lucy Rosedale, a sommelier. A fast-selling locavore restaurant.

Presentation

He's not yet 30, but with his partner Lucy Rosedale, Noé Viviès has already lived the equivalent of several lives as a restaurateur. " We've actually done a lot of traveling with Lucy," says the young Breton chef. " My father worked in sailing, he helped organize the Route du Rhum and was also Olivier de Kersauson's shipowner. With the Admiral, he opened the Tour du Monde in the port of Moulin Blanc in Brest, a restaurant where I began my career as a teenager ".

From Amsterdam to Hong Kong, training through travel

Accustomed to relocating, the young man settled in Amsterdam to study hotel and restaurant management, and quickly realized that it was cooking that made him tick, as he gained experience in a series of local bistros to finance his studies. " With my degree in hand, I left for Hong Kong and the Amber restaurant, one of the city's best, where the chef was Dutch. I stayed there for just over two years, before returning to France at Covid time ".

Two years in Japan before settling in Rennes

He then joined the We Are Onacollective , multiplying events all over the world, and met Lucy, with whom he spent two years in Japan as chef-in-residence. It was an opportunity to discover a new culture and draw inspiration from practices that the couple will implement in their future restaurant. " The idea of settling in Brittany came to us quite quickly. Rennes was a logical choice, a city full of energy, with many producers close by, enabling us to work with whole animals, which we share with Fezi, Cédric Bruneau's restaurant, just across the street ".

Jozy, a fast-growing Rennes restaurant

Keen to work exclusively with small-scale producers and to follow the seasons as closely as possible, supported by his partner, an excellent sommelier and restaurant manager, Noé Viviès is fully satisfied with Jozy's beginnings. " We started with four people in September 2025, and six months later there are already eight. Customer feedback has been excellent.
