A bastion of good taste that never falters, and one of the most coveted neighborhood addresses in the prefecture. The young 2021 talent Cédric Bruneau pursues his path with great independence, rolling out new ideas every season based on the intangible principles of fresh produce, seasonality and short circuits. The plates on the slate are always unpredictable, revealing themselves only once you've passed through the door, and always demonstrating inventiveness: a starter of Jerusalem artichoke, gwell and haddock, udon noodles with coral, rutabaga and squid, lamb, cabbage and new turnips, a dessert of poached pear, steamed cake and fragrant flouve.
