“As I was learning the food menu, I discovered the wine list… and I’ve stuck with it ever since. ” A native of Nîmes, Jean-Gabriel Siviragol trained in the hospitality and restaurant industry and initially found his calling in the dining room, before developing a passion for wine, encouraged by an uncle who was a cellar master.
From Le Castellet to Mauritius
He honed his expertise under Christophe Bacquié at Le Castellet, then in Monaco at L’Ômer at the Hôtel de Paris and at Le Pavillon at the Hôtel Hermitage. He then headed to Mauritius, where he gained management experience leading a team of about thirty people and overseeing a wine cellar featuring wines from fifteen countries.
At Le Chantecler, a wine cellar in harmony with the kitchen
In October 2024, he settled in Nice and joined Le Negresco and its gourmet restaurant, Le Chantecler (3 toques), alongside Chef Virginie Basselot. There, he refined an already prestigious wine list to complement the chef’s Mediterranean cuisine, expanding the selection to include wines from across the South of France and highlighting lesser-known estates alongside the grand crus . “ Wine is not limited to knowledge.
