This sturdy fellow, who grew up in Corsica (his mother and stepfather ran the now-defunct Bellevue hotel-restaurant in Lumio, overlooking the marvellous bay of Calvi) and was trained at L'Oasis, where he was a member of the team that ran the restaurant.he trained at L'Oasis, when Louis Outhier was still in charge, has nonetheless ticked off most of the objectives he set himself: Meilleur ouvrier de France in 2004, 5 toques in our columns, 3 stars with our colleagues, the man we discovered at La Villa in Calvi, a stone's throw from where he grew up, is still resolutely focused on the future.
At Le Castellet, where he settled in 2009, this warrior, who never envisaged confining himself to traditional palace cuisine, is always on the move. In this dream setting, in the heart of the enchanting Sainte-Baume massif, in this protected world of chic Provence, a stone's throw from the racetrack and between the woods and the golf course, Christophe Bacquié knows how to move from the regional to the symphonic with disconcerting ease. This top-flight chef, who also fondly remembers his Parisian days, notably at Prunier, dares to work with the purity of the product, pushing it, exalting it, transcending it.aided by his wife, Alexandra, who watches over the entire house with great professionalism and a keen eye for the restaurant's progress.
