Presentation

Barely arrived, already at ease. Alice Abgrall joined the house of brothers Xabi Ibarboure and Patrice Ibarboure in Bidart in 2025, a large family property set in two hectares of parkland, as its sommelier.

A cellar rooted in the Basque Country

She looks after a cellar of some 1,400 references, well stocked with Irouléguy, Madiran and Spanish wines, alongside the great classics of the major regions.

Alcohol-free pairings designed as a team

From her very first day, she took part in reworking the alcohol-free offer at Les Frères Ibarboure (4 toques), devised collectively with the chefs and Soline Ibarboure, the restaurant’s director. Every dish on the menu has its match: a soft, floral cocktail for cod with Roscoff onions, Lapsang Souchong tea infused with fir needles from the garden for ember-cooked beef, or flavoured ice cubes that change the pairing as the dish is enjoyed.
