On Monday October 27, 2025, Valentin Loison, chef at the Bulle d'Osier restaurant in Langres, was awarded the Grand de Demain Grand Est 2026 title. The award recognizes his investment in Le Clos Vauban.

Valentin Loison has made a name for himself with his personal, masterful cuisine, at the heart of the terroir. With his partner Anaïs Bercegeay, he runs the kitchens of a historic mansion in Haute-Marne, which earned him this trophy at the Gault&Millau Tour Grand Est held in Strasbourg.

A career in eastern France

Originally from the Jura region, where he grew up and attended hotel school, the chef then moved from establishment to establishment to train as a chef and pastry chef.at the end of 2024, Valentin Loison embarked on a new project alongside Laurent Petit. "He wanted to help me and my partner to open an establishment that totally suited us."

Together, they opened Le Clos Vauban in Langres, an entity comprising a gourmet restaurant - Bulle d'Osier - as well as a bistro and hotel. " There's just one kitchen for the whole place, which allows the teams to work together, and be on all fronts."

The Haute-Marne imprint in the kitchen

While the restaurant was being renovated, Valentin Loison and Anaïs Bercegeay took to the road to meet local artisans and discover their products.

through his dishes, the chef cherishes the diversity of local produce in Haute-Marne: "It's a great hunting area, but also home to market gardeners and breeders. There are many products from the region that give you a sense of travel."

The title of Grand de Demain

"When we opened the establishment, we didn't know what to expect."Today, the restaurant proudly boasts three toques, and the chef won the Grand de Demain Grand Est trophy just one year after opening: "It's a great reward for these first few months. We hope to continue pleasing people and not stop there."
