Stéphan Paroche and Justine Viano, chefs at La Table de Castigno in Assignan, were awarded the title of Grand de Demain at the Gault&Millau Tour Occitanie 2024. Read their reaction.

At La Table de Castigno (3 toques), roles are divided between two chefs: Stéphan Paroche and Justine Viano. One communicates, the other acts on the operational side. "I'm more in charge of starters and fish, while Stéphan is more in charge of appetizers and meat. But in all cases, the work is done together," explains the chef, who won the title of Grand of Tomorrow in the Gault&Millau Tour Occitanie 2024.

The table offers a"living cuisine". "We build it with our producers. It's not set in stone. We don't have a predefined menu," explains the chef.

One title, two chefs, one team

"It's a great recognition for us, it's what we do every day," says the chef. "We cook because it's our job, because we love it, and because our aim is to please people. To have an award like the title of Grand de Demain, it's an accomplishment, a thank you and recognition to the teams." "You're nothing without your team, and it's important to underline that," adds Stéphan Paroche.
