For his 10th anniversary at the Pavillon Ledoyen, Yannick Alléno bets on a historic dinner
On May 29, 2024, a unique evening will be held to celebrate the 10ᵉ anniversary of the Alléno Paris restaurant. The dinner will be marked by the presence of a famous history buff, who will come to preside over the event.
Take part in Secrets d'Histoire, while enjoying a menu filled with revisited period dishes - that's the challenge taken up by 24-toque chef Yannick Alléno. The evening will take place in the listed Alléno Paris restaurant (5 toques) at the Pavillon Ledoyen. It will be punctuated by a multitude of selected anecdotes about the bicentennial house in the Champs-Élysées gardens. All dictated by the voice of the famous animator and raconteur Stéphane Bern, who has agreed to play the game out of friendship. A surprising alliance, but not without meaning, given Bern's love of French heritage.
Between tradition and modernity
Whether in Paris, Courchevel, Monte-Carlo, London or Dubai, the chef is recognized internationally by his peers for the modernity of his cuisine and his rare work as a saucier. That's why, for this anniversary dinner, Yannick Alléno wanted to combine tradition and modernity. For the occasion, he created a five-part menu in which he revisited the great classics of French gastronomy. These include "Jolies demoiselles de Guilvinec" langoustines, their historic Breton appellation, poached "à la nage" with a meadow green sauce, and "Chateaubriand de bœuf" in a wagyu version, accompanied by a Solférino sauce and pommes allumettes.
These dishes, composed of exceptional products, will also be accompanied by a wine and food pairing. Here too, chef Yannick Alléno is playing the discovery card, with a Hungarian "Tokaji Aszu" wine to match the dessert of "savarin au rhum blanc, chantilly soyeuse au sucre galabé".
