Poetry, a table in Nîmes by Nicolas Fontaine and Logan Thouillez
In February, Poésie will open its doors in Nîmes. This new restaurant was conceived and inspired by two of Pierre Gagnaire's disciples: chef Nicolas Fontaine and sommelier Logan Thouillez.
This project, driven and matured by chef Nicolas Fontaine, a disciple of Pierre Gagnaire, accompanied by sommelier Logan Thouillez, who has also worked with the 5-Toques d'Or chef, will take place in the heart of Les Halles de Nîmes, on the site of the former Plaisir des Halles.
A demanding career with Pierre Gagnaire
After more than twenty years under the wing of Pierre Gagnaire, Nicolas Fontaine has built a solid and demanding career. He headed up the Gaya restaurant in Paris, worked at theHôtel Imperatorin Nîmes, before serving as executive chef at the L'Impé brasserie in Nîmes, and then at the Duende gourmet restaurant. With this new project, the chef marks a turning point, driven by the desire to offer a cuisine that is organic, sincere and clear.
A more accessible formula
at Poésie, due to open in February, the cuisine will be bistronomic. A lunch menu will be available on weekdays at 35 euros (starter, main course, dessert), or 25 euros for a starter/main course or main course/dessert. On Sundays, diners can also enjoy a unique menu at 65 euros. An accessible table, supported by a cuisine of meaning, close to regional producers and craftsmen, and accompanied by a selection of wines thought up by sommelier Logan Thouillez, for whom the promotion of local vineyards is essential.
