For one week, from May 6 to 13, 2025, Philippe Etchebest will be offering new ravioli recipes at the Atelier des Citernes in Bordeaux. A way of making his cuisine accessible to as many people as possible.

From May 6 to 13, 2025, taste buds in Bordeaux will be in for a treat. Philippe Etchebest (4 toques for Maison Nouvelle and 2 toques for Le Quatrième Mur) takes over the Atelier des Citernes to unveil an original, temporary culinary concept entirely dedicated to ravioles. It's a bold, gourmet proposition that promises to seduce the curious and the discerning alike.

Etchebest's ephemeral menu

True to his philosophy of simple, generous and accessible cuisine, the chef is offering a selection of original recipes based around raviole, in both savory and sweet versions. Among the creations to discover duck confit raviole topped with jus réduit, a vegetarian variant with fresh herbs and goat's cheese, and a sweet version with caramelized apples and salted butter caramel. Each plate is priced from 5 to 10 euros - slightly less than the raviole at Signature.

An atypical venue in the heart of new Bordeaux

The setting for this culinary experience is not to be outdone. L'Atelier des Citernes, located in the Amédée Saint Germain district, is a hybrid space that opened a year ago.
