Pecoranegra: Mauro Colagreco's pizzeria in Lyon
Mauro Colagreco will open a new Pecoranegra pizzeria in Lyon on January 23, 2024. A new challenge for the chef, who aims to offer a more popular cuisine.
A surprise! After Menton and Strasbourg, Mauro Colagreco, chef of the Mirazur restaurant in Menton, is opening a new Pecoranegra in the heart of the capital of gastronomy. While Lyon is known for its multitude of gourmet restaurants, famous bouchons and bistros, on January 23, 2024 the city will welcome a pizzeria designed by the 2009 Chef of the Year.
Popular cuisine at reasonable prices
While this may seem a surprising choice for a chef of such stature, it's actually quite logical, given that Mauro Colagreco 's family is partly of Italian origin. "I also have a lot of friends in Naples and Rome, which for me are the two cities where you eat the best pizzas. And above all, I love it!" he laughs.
With the Pecoranegra brand, which means "black sheep" in Italian, Mauro Colagreco also intends to break out of the realm of haute gastronomy, to offer good products to as many people as possible, thanks to a popular recipe and reasonable prices (from 11 to 17 euros per pizza). "It's easy to defend these principles when you're offering food for 45 people at an elitist price. Here, the challenge is to make all this accessible to as many people as possible", sums up the Mirazur chef.
Pecoranegra in Lyon will accommodate 75 diners in a 130 m2 space in the 6th arrondissement. Naturally, Mauro Colagreco will take great care with the pizza dough, prepared with organic flour from one of the last remaining Italian mills, and left to rest for 48 to 72 hours to improve digestibility.
As for the decor, the Italian-Argentinian chef and his team opted for Marcelo Joulia, the architect who designed the Mirazur. The restaurant, with its eight bay windows, will open onto a planted area. In spring, a terrace with 30 seats will be added.
