Presentation

"As the old Bugatti father used to say, cars are made to run, not to stop."Taken fromÀ bout de souffle, Belmondo's line would fit the kitchen like a glove. Mauro Colagreco is a bit like the Bugatti. Untiring, he's not about to give up his apron.

Born in Argentina, Mauro Colagreco is an Italian who has brought together all the influences that have shaped his passion, from the most prestigious culinary schools in Buenos Aires to experiences with the most renowned French chefs.Loiseau, Passard, Ducasse, Martin - to become Mauro Colagreco, the young prodigy who lives cooking like a virtuoso captures the fleeting soul of a fugue.

The plate of a great chef always tells a story. Mauro Colagreco can evoke the Sanremo fish auction, freshly caught denti wrapped in the suave veil of lightly smoked eggplant, or share the scents of nearby exotic gardens. He has fully grasped his role as intermediary between nature and the plate, as catalyst and revelator of flavors. Our 2009 Chef of the Year is now world-renowned, and that's only fair.
