After seven years at the helm of Substance, the Parisian restaurant he co-founded in 2018, Matthias Marc has announced his departure, effective December 31, 2025. A carefully considered decision, guided by the desire to open a new personal chapter.

This December 2025, chef Matthias Marc has announced his departure from Substance (3 toques), the Paris restaurant he opened in 2018 with entrepreneur Stéphane Manigold. He will leave the table at the end of the year, after seven years at the helm.

A remarkable career

Trained in a number of renowned establishments, Matthias Marc built a solid career path before embarking on his entrepreneurial adventure. He passed through Saint-James in Bouliac, Lasserre (3 toques) in Paris, Louis XV - Alain Ducasse (5 toques) in Monaco, as well as Racine des Prés (2 toques), all stages that shaped his precise and personal cuisine.

In 2018, he opened Substance in Paris with Stéphane Manigold. The restaurant quickly established itself as a recognized address on the Parisian scene, driven by a cuisine marked by the chef's Franc-Comtois origins. Certain dishes, inspired by his native region, became signatures of the house and contributed to its success.

In 2021, Matthias Marc's reputation was further enhanced by his participation in the TV show Top Chef, which brought him to the attention of a wider audience. This media exposure accompanies the development of Substance, without altering its DNA.

A new project for 2026

After seven years at the helm of the restaurant, the chef has decided to turn the page. starting in 2026, he will devote himself to a new personal project, led by his wife and business partner Hanna Marc. Scheduled to open in summer 2026, the new restaurant will be located in the Doubs region, in the chef's native land.

This departure marks the end of a Parisian cycle and the opening of a new stage in his career, now focused on a more assertive territorial anchoring.
