Maison des Cimes: Matthias and Hanna Marc Celebrate the Franche-Comté Way of Life

With this new hotel located on the shores of Lake Saint-Point, this native of the Doubs region is making a true return to his roots—a result not only of his life journey but also of a deep attachment to his native region.

After twelve years in the capital, running his restaurant Substance (3 toques) and making a notable appearance on *Top Chef* that took him all the way to the semifinals, Matthias Marc is embarking on a new chapter in his career.

The chef, who has made it a point of honor “to tell the story of the Jura through [his] dishes,” now hopes to “invite people to come and experience it for themselves.”

A restaurant shaped by the artisans of the Jura

To this end, Matthias and Hanna Marc, in partnership with Sylvain Courivaud and Eulalie Mariton—a former sommelier at Braise—have completely transformed the Atelier de Donat to create Maison des Cimes. Pontissal-based architect Marc Billamboz, along with numerous local artisans, were brought in to shape the identity of the space, where wood and schist stone reign supreme.

Located in Malbuisson, on the shores of Lake Saint-Point—France’s ninth-largest natural lake—the hotel was designed to blend seamlessly into the landscape. The new property features nine guest rooms and two restaurants.

Two restaurants, one region

At La Table des Cimes, the gourmet restaurant, the menu is, unsurprisingly, inspired by the water and the surrounding forest. Freshwater fish, game, foraged herbs, wild shoots… The entire Jura region is featured on the menu, with the modernity and creative freedom that characterize Matthias Marc. The wine cellar, housing over 750 bottles and located right at the heart of the property, extends the expression of the terroir right into the glass.

The Bistrot des Bûcherons, meanwhile, offers a warm, inviting experience in the spirit of a traditional inn, with terracotta floor tiles, exposed beams, and a wood-fired kitchen.

More than just a place to stay, Maison des Cimes aims to be a haven for lovers of authenticity, set in a pristine natural environment. A tribute to the chef’s childhood, spent between the family sawmill, walks in the forest, and afternoons spent strolling along the lake.
