The Jean des Sables restaurant has new owners: here's who they are
Jean des Sables, a renowned restaurant overlooking the ocean in Hossegor, is embarking on a new chapter. Oriane Gomez and Louis Jalinier are taking over from Clément Pichard and will welcome their first guests starting July 2, 2026.
Great restaurants sometimes reinvent themselves without losing their identity. In Hossegor, Le Jean des Sables—a gourmet restaurant renowned for its seafood-focused cuisine and breathtaking view of the Atlantic—is turning a new page in its history with the arrival of a young duo at the helm. Oriane Gomez and Louis Jalinier are officially taking over the restaurant, which was previously run by chef Clément Pichard.
Who are Oriane Gomez and Louis Jalinier?
This new duo has built a solid career before taking over this coastal institution. Oriane Gomez notably served as executive chef atthe Hôtel du Palais in Biarritz, as well as at Cheval Blanc Paris for nearly three years. For his part, Louis Jalinier rose through the ranks at the same establishment, progressing from commis to demi-chef de partie, before taking on the role of sous chef in 2023.
A Change While Staying True to Our Roots
Awarded two toques, Jean des Sables has established itself as one of the must-visit restaurants on the Landes coast. Located overlooking the ocean, the restaurant has built its reputation on contemporary cuisine that showcases local seafood, seasonal produce, and regional specialties from the Landes, all served in a minimalist setting that opens onto the beach.
On social media, the new owners announced this transition with great emotion.“Today, we are very happy to announce that Louis and I are taking over Jean des Sables. It is with great enthusiasm, humility, and gratitude that we begin this new chapter,” writes Oriane Gomez.
The duo also expressed their commitment to building on the restaurant’s legacy while infusing it with their own vision: precise, refined cuisine deeply rooted in the sea, the seasons, and local producers.“We look forward to meeting those who already know this place, to bringing its history to life while writing our own, and to sharing this new adventure with you.” The first service under this new management will take place on Thursday, July 2, 2026, at lunch.
