In 2026, Metz will be home to a new gourmet restaurant from the Bernard Loiseau group. The project will also include a tea room and bar.

Groupe Bernard Loiseau continues to expand with the announcement of a new gourmet restaurant in Metz, scheduled to open in spring 2026. Named "Loiseau de Lorraine", the restaurant will be located in an emblematic site of Metz's heritage: the former fish market on Place de Chambre, at the foot of the cathedral.

This site steeped in history - a former episcopal palace never occupied by a bishop, transformed into a market immediately appealed to Bérangère Loiseau, Chairman and CEO of the group: "The building impressed us, and we wanted to bring this heritage back to life, as we did in Besançon."With its majestic vaults, Jaumont stonework and exceptional location, the site has everything it takes to become a key address on the Lorraine culinary scene.

Work will start in September 2025, and will take eight months to complete. The project is fully in line with the group's expansion strategy, which has remained unchanged since Bernard Loiseau moved to Saulieu in 1975. "We want to continue to defend what my father has always defended: the terroir and local products," says Bérangère Loiseau.

A project with a strong identity and assertive ambitions

With a 50-seat dining room and 450 m² of floor space, the future restaurant will offer a diversified range of gastronomic and lifestyle options: a gastronomic restaurant, a lounge bar that can be modulated from breakfast to the tea room and then to the bar in the evening, as well as a pastry counter and an oenotheque highlighting the group's Burgundian DNA.

Designed to be a lively place, "Loiseau de Lorraine" will target a broad customer base: Metz residents, tourists, professionals and businesses. "Thecity is ideal for a restaurant of this standing. We need to make the restaurant more dynamic, with an offer that will appeal to Metz residents, travelers and B-to-B customers alike."

The project also includes modular spaces for hosting events and business meals. A dozen new jobs will be created: "We've already opened the door to job applications, but we'll take our time to decide. The idea is also to bring out local talent."

A strategic destination at the crossroads of Europe

Metz quickly became an obvious destination for the Group:"I had listed a few cities where I thought there was potential, and Metz was one of them. When I heard about a call for tenders, I looked into the matter and realized that there was economic vitality and a strategic location, at the crossroads of Europe with Germany, Belgium and Luxembourg nearby."

The choice of Metz is also in line with a geographical and gastronomic continuity:"In Saulieu, we're already getting customers from the south of France, and we've already got a foothold in the east. A lot of things were obvious about this destination."

50 years of passion and a new era in Saulieu

This new opening comes as the Bernard Loiseau Group celebrates its 50th anniversary. in Saulieu, where it all began, the historic restaurant is also undergoing a major transformation: work is underway to bring the premises "up toplate", in a drive to modernize. Since early 2025, it has been home to Louis-Philippe Vigilant, the new chef, succeeding Patrick Bertron.

Between tradition and renewal, loyalty to the terroir and contemporary vision, the Bernard Loiseau group continues to write its history, and that of French gastronomy, with conviction and high standards.
