It seems that after a well-deserved summer break, the French gastronomic scene is back in full swing. From the four corners of France, discover the new restaurants to try for a gentler back-to-school season.

DAMES, a warm, contemporary address in Dol-de-Bretagne

Marine Hervouet and Pascaline Albicini have imagined DAMES, a gourmet restaurant in the heart of a former truck stop. After several months of preparation, the doors of DAMES finally opened a few days ago. The duo, who have worked in some fine establishments, have created an address that's very much in their own style. The cuisine focuses on the Breton terroir to offer a moving, free and sensitive experience.

Envie le Banquet, Eloi Spinnler's new sin in Paris

Eloi Spinnler has not finished conquering the capital. And for this latest opening, the chef has come up with a rather original concept, inspired by another cardinal sin. Envie le Banquet is an all-you-can-eat all-you-can-eat buffet that's both responsible and creative. Indeed, the menus are designed to be zero waste, while using local and seasonal produce.

La Farm, a sporting collaboration near Reims

More than just a restaurant, chef Juan Arbelaez and BMX world champion Matthias Dandois have imagined a place to live. La Farm will be set up in the heart of the Montagne de Reims park, with menus designed for athletes, accommodation for athletic retreats, events in the heart of nature... A place to reconnect with oneself.

Ébène, Jihyun Kim's first opening in Paris

Originally from South Korea, Jihyun Kim trained at the Lyfe Institute. After initial experience in Lyon, the young chef joinedAlain Passard 's team at L'Arpège in Paris. But after six years, Jihyun Kim and her partner, Simon Plantrou, decided to take on a new challenge by opening their first restaurant, with the help of the Gault&Millau Jeunes Talents Endowment.
