Biarritz's Hôtel du Palais welcomes its new chef

The Hôtel du Palais in Biarritz will reopen its La Rotonde restaurant in May 2024, with a new chef at the helm.

The Hôtel du Palais in Biarritz announces the arrival of its new chef. Christophe Scheller will replace former chef Aurélien Largeau, who was dismissed in December following the hazing affair, which was dismissed in early January.

Who is Christophe Scheller?

Christophe Scheller will take part in the reopening of La Rotonde restaurant at the Hôtel du Palais in May 2024. "We can't wait to reveal our great new restaurant, open to all and especially to the people of Biarritz. The demanding professionalism of chef Christophe Scheller, whom we are delighted to welcome to our teams, and his solid experience will be major assets in our ongoing quest for excellence to ensure the success of this project", assures Vincent Poulingue, General Manager of the Hôtel du Palais.

This "solid experience" began in 2001, when Christophe Scheller cut his teeth at the Hôtel Royal Monceau in Paris alongside Christophe Pelé, before becoming sous-chef of the Arôme restaurant. In 2011, the chef assisted Thierry Marx at the opening of Sur-Mesure at the Mandarin Oriental Paris, before working at the Park Hyatt Paris-Vendôme with Jean-François Rouquette. Christophe Scheller then took up his first chef position at the Hyatt Regency Chantilly, before becoming Executive Chef at the Hyatt Regency Paris Etoile. A new chapter begins for Christophe Scheller, who will take up his post at the Hôtel du Palais in Biarritz by March 2024.
