Château Eza chef Justin Schmitt was named Grand of Tomorrow at the Gault&Millau Tour Provence-Alpes-Côte d'Azur-Corse-Monaco 2024.

A restaurant overlooking the entire Mediterranean makes you want to see far, and that wouldn't be a bad omen here... The executive chef of Château Eza, located between Nice and Monaco, was named Grand of Tomorrow 2024 at the Gault&Millau Tour Provence-Alpes-Côte d'Azur-Corse-Monaco 2024 held at the Palais de la Bourse in Marseille this Monday, March 11, 2024.

Who is Justin Schmitt?

The chef cut his teeth in Paris. "I chose the South because of a love affair. My wife is from Monaco. Although Justin Schmitt initially wanted to open his own restaurant, Covid-19 didn't make the project easy."I went to see my friend Mauro Colagreco. We'd worked together in the past at Le Grand Véfour. He told me that Château Eza was looking for a chef. I introduced myself and we hit it off right away," says Justin Schmitt. "The location is idyllic", which does nothing to detract from the experience he has been pursuing since 2022.

What's it like to be a big tomorrow?

"I wasn't expecting it at all! It was a big surprise." Justin Schmitt , who likes to work without chasing titles, is very grateful. Relaunching Château Eza was a challenge,"the place had been a bit forgotten before", so this title is a nice reward to show it's been met.
